Main Ingredients

  • 1 lb chicken breast Fresh or thawed
  • 1 cup cilantro lime rice Prepared according to package instructions
  • 1 cup bell peppers, diced Any color works
  • 1 cup corn Canned or frozen, rinsed if canned
  • 1 cup black beans, rinsed and drained Can use pinto beans as a substitute
  • 1 medium avocado, sliced Best added just before serving

Seasonings and Oil

  • 1 tablespoon olive oil For seasoning the chicken
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

Garnish

  • Fresh cilantro For garnish before serving

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breast with olive oil, chili powder, cumin, salt, and pepper.

Cooking

  • Bake the chicken for 25-30 minutes or until cooked through.
  • While the chicken is baking, prepare the cilantro lime rice according to package instructions.

Assembly

  • In a bowl, combine the diced bell peppers, corn, and black beans.
  • Once the chicken is done, slice it.
  • Assemble the meal prep bowls: place cilantro lime rice at the bottom, followed by chicken slices and the veggie mix.
  • Top with sliced avocado and fresh cilantro.

Storage

  • Store in the fridge for meal prep or enjoy immediately.

Notes

To keep your meal prep bowls fresh, store them in the fridge in airtight containers. They can last up to four days this way. If you want to freeze them, omit the avocado until you’re ready to eat. Reheat in the microwave or oven until warm.
