Ingredients
  

  • 450 g spicy Italian sausage (or merguez for Moroccan twist)
  • 225 g cream cheese, softened
  • 1 can (283 g) Rotel tomatoes (or fire-roasted tomatoes with jalapeño)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 pinch salt and black pepper, to taste
  • 1 tbsp fresh herbs (parsley, chives, or cilantro) for garnish
  • smoky paprika or harissa (optional, for heat)
  • chips, crackers, pita, or veggie sticks (for serving)

Instructions
 

  • In a large skillet, cook the sausage over medium-high heat for 5–7 minutes until fully browned and cooked through. Break into bite-sized pieces. Drain excess fat.
  • In a mixing bowl, whisk together softened cream cheese and Rotel tomatoes until smooth and creamy. Use a hand mixer if desired for extra smoothness.
  • Add the cooked sausage, shredded cheddar cheese, garlic powder, salt, and pepper. Stir until well combined.
  • Transfer mixture to a large pot or oven-safe dish and cook over low heat for 15–20 minutes, stirring occasionally, until cheese is melted and dip is hot.
  • Garnish with fresh herbs and optional smoky paprika or harissa. Serve hot with chips, crackers, pita, or veggie sticks.

Notes

Make ahead and store in the fridge for up to 3 days, then reheat before serving. For a fiery Moroccan twist, try using merguez sausage or a spoonful of harissa. This dip is highly versatile—swap in different cheeses, spices, or toppings to suit your taste.
