Ingredients
  

For the Rice

  • 1 cup Sushi rice Use short-grain sushi rice for best texture.
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt

For the Topping

  • 8 ounces Spicy ahi tuna Diced.
  • 1 tablespoon Sesame oil
  • 2 tablespoons Soy sauce
  • to taste Spices Adjust according to preference.

For Garnish

  • 1 Avocado Sliced.
  • 1 Jalapeño Sliced.
  • nori Nori (seaweed sheets)

Instructions
 

Preparation of Rice

  • Rinse the sushi rice until the water runs clear and then cook according to package instructions.
  • Once cooked, season the rice with a mixture of rice vinegar, sugar, and salt.
  • Allow the rice to cool, then spread it out in a thin layer and let it set until firm.
  • Cut the rice into rectangles and fry until crispy.

Preparation of Topping

  • Prepare the spicy tuna by mixing diced ahi tuna with sesame oil, soy sauce, and spices.

Assembly

  • Slice the avocado and jalapeño.
  • Top each crispy rice rectangle with a dollop of spicy tuna, a slice of avocado, and finish with a slice of jalapeño for extra heat.

Notes

Leftover crispy rice should be stored in an airtight container in the fridge for up to a day. For longer storage, freeze cooked rice squares after frying. Avoid microwave reheating to maintain crispiness.
