Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add spinach and sauté until wilted.
  • In a bowl, combine cooked spinach, feta, garlic powder, salt, and pepper.

Cooking

  • Place a tortilla in the skillet, add some of the spinach and feta mixture, and top with another tortilla.
  • Cook until golden brown on both sides, about 2-3 minutes per side.

Serving

  • Remove from skillet, cut into wedges, and serve warm.

Notes

Pairs well with salsa, sour cream, or guacamole for dipping. Store leftovers in an airtight container in the fridge for up to 3 days.
