Main Ingredients

  • 2 pieces chicken breasts
  • 1 cup cream cheese Can use low-fat for a lighter version
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped Can substitute with mushrooms or sun-dried tomatoes
  • 1/2 cup grated Parmesan cheese Extra can be used for topping if desired
  • 1 tablespoon olive oil
  • Salt and pepper to taste Always season chicken well for added flavor

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt and pepper, then add to the skillet.
  • Cook until golden brown, about 5-7 minutes per side. Remove chicken from the skillet and set aside.

Cooking the Sauce

  • In the same skillet, reduce heat to low and add cream cheese, stirring until melted and smooth.
  • Stir in chopped spinach and artichokes, and cook for another 2-3 minutes.
  • Add Parmesan cheese and mix until well combined.

Final Assembly

  • Return chicken to the skillet, cover with the sauce, and cook until heated through.
  • Serve warm and enjoy!

Notes

To keep leftovers fresh, store them in an airtight container in the fridge for about 3-4 days. If you'd like to freeze it, allow it to cool completely before transferring to a freezer-safe container. Reheat by warming in the microwave or on the stove with a splash of water if needed.
