  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped Use fresh spinach for optimal flavor.
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese Feel free to experiment with different cheeses.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil Use for searing the chicken.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the chopped spinach, cream cheese, mozzarella, garlic powder, salt, and pepper.
  • Carefully cut a pocket in each chicken breast.
  • Stuff the chicken breasts with the spinach mixture and secure with toothpicks if needed.
  • Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 3–4 minutes on each side.
  • Transfer to a baking dish and bake for 25-30 minutes until the chicken is cooked through.

Notes

To keep leftovers fresh, let the chicken cool completely and store in an airtight container in the fridge for up to three days. If freezing, wrap each breast tightly in plastic wrap and place in a freezer-safe bag. Thaw in the fridge overnight before reheating.
