Ingredients
  

  • 4 cups frozen corn (or fresh/canned)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a bowl, whisk together cream cheese, milk, and garlic until smooth.
  • In a large pot, melt butter over medium heat. Add corn and cook 5–7 minutes until heated through.
  • Add the cream cheese mixture, cheddar, and mozzarella. Stir and cook 5–7 minutes until cheese is melted and sauce is creamy.
  • Season with salt and pepper. Serve hot, garnished with fresh herbs if desired.

Notes

Make ahead: Prepare up to 3 days in advance and reheat gently before serving. Freeze for up to 3 months. For variations, try swapping in Parmesan or provolone, adding nutmeg or red pepper flakes, or stirring in chicken broth or white wine for extra flavor. Garnish with fresh herbs or green onions for a finishing touch.
