For the Slaw

  • 4 cups shredded cabbage Can substitute with kale or Brussels sprouts.
  • 1 cup grated carrots
  • 1 piece apple, thinly sliced Any type of apple works.
  • 2 tablespoons apple cider vinegar Can mix with different vinegars for varied flavor.
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • In a bowl, mix apple cider, soy sauce, honey, garlic powder, salt, and pepper.
  • Marinate the chicken thighs in the mixture for at least 30 minutes.

Cooking

  • Preheat the oven to 400°F (200°C).
  • Place the marinated chicken in a baking dish and bake for 25-30 minutes until cooked through.
  • In a large bowl, combine shredded cabbage, grated carrots, sliced apple, apple cider vinegar, olive oil, salt, and pepper to make the slaw.

Notes
