Add the egg and vanilla extract, beating until well incorporated.
In a medium bowl, whisk together flour, baking soda, and salt.
Gradually mix the dry ingredients into the creamed mixture until a uniform dough forms.
Shape the dough into 1-inch balls and roll each ball in the extra granulated sugar to coat.
Place balls 2 inches apart on the prepared baking sheets.
Bake for 8 to 10 minutes until the cookies are puffed and set.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
