Strawberry Kiss Cookies

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large eg g
  • 1 teaspoon vanilla extract
  • 1.5 cups all -purpose flour
  • 3 ounces strawberry flavored gelatin powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sal t
  • 24 milk chocolate kisses, unwrapped
  • 1/4 cup extra granulated sugar for rolling

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together softened butter, 3/4 cup sugar, and strawberry gelatin powder until light and fluffy.
  • Add the egg and vanilla extract, beating until well incorporated.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the creamed mixture until a uniform dough forms.
  • Shape the dough into 1-inch balls and roll each ball in the extra granulated sugar to coat.
  • Place balls 2 inches apart on the prepared baking sheets.
  • Bake for 8 to 10 minutes until the cookies are puffed and set.
  • Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
