Ingredients
  

For the Crust

  • 2 cups Oreo cookie crumbs Use finely crushed Oreo cookies.
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling

  • 16 oz cream cheese, softened Bring to room temperature for easier mixing.
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs Add one at a time for best results.
  • 1 cup strawberry puree Freshly made from ripe strawberries.
  • 1/4 cup fresh strawberries, diced For additional texture.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix Oreo cookie crumbs with melted butter until combined. Press the mixture into the bottom of a greased 9x9-inch baking pan to form a crust.
  • In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  • Gently swirl in the strawberry puree and diced strawberries into the cream cheese mixture.
  • Pour the cheesecake filling over the crust and spread it evenly.

Baking

  • Bake for about 25-30 minutes, or until the center is set.

Cooling and Serving

  • Allow to cool, then refrigerate for at least 4 hours before slicing into bars. Serve chilled.

Notes

Chill well for clean slicing and consider serving with whipped cream or chocolate sauce. Store in an airtight container in the refrigerator for up to a week.
