  • 1 loaf Pound cake Use store-bought or homemade.
  • 8 oz Cream cheese Softened.
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries Sliced.
  • 1/2 cup Crushed shortbread cookies
  • 1/4 cup Pink sugar sprinkles
  • 4 oz White chocolate Melted for drizzling.

Preparation

  • Bake or use store-bought pound cake and allow it to cool.
  • In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  • Cut the pound cake into thin sheets.
  • Spread the cheesecake filling evenly over each sheet of pound cake.
  • Place fresh strawberries along one edge of the cake sheet and sprinkle crushed shortbread cookies over them.
  • Roll the cake tightly around the strawberries and filling to form sushi rolls.
  • Slice the rolls into bite-sized pieces.
  • Drizzle with melted white chocolate.
  • Finish by sprinkling pink sugar sprinkles on top before serving.
