Ingredients
  

For the Cookie Cups

  • 2 3/4 cups all-purpose flour Whisked with baking soda and powder.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Grease a muffin pan.
  • In a bowl, whisk together flour, baking soda, and baking powder.
  • In a separate bowl, cream the butter and sugar until smooth. Beat in the egg and vanilla. Gradually mix in the dry ingredients.
  • Press the dough into each muffin cup, making an indentation in the center.

Baking

  • Bake for 9-10 minutes until edges are lightly golden. Allow to cool.

Frosting and Serving

  • For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until well combined.
  • Swirl frosting into the cooled cookie cups and serve!

Notes

Store in an airtight container in the fridge for up to a week. Freeze if you want to keep longer, wrapping them to avoid freezer burn.
