Ingredients
  

For the marinade

  • 1 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Main ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • Chopped green onions for garnish for serving

Preparation

  • In a large bowl, combine sweet chili sauce, soy sauce, olive oil, lime juice, garlic, salt, and pepper.
  • Add the shrimp and pineapple chunks to the marinade, tossing to coat.
  • Allow to marinate for 15 minutes.

Cooking

  • Heat a skillet over medium-high heat and add the marinated shrimp and pineapple mixture.
  • Cook for 5-7 minutes or until the shrimp are pink and cooked through.
  • Serve hot, garnished with chopped green onions.

Notes

To keep leftovers fresh, store them in an airtight container in the refrigerator for up to two days. For long-term storage, you can freeze the cooked shrimp in a freezer-safe bag for up to three months.
