  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg Can be omitted if not available.
  • 1/4 teaspoon salt

Crust Ingredients

  • 1 package pre-made pie crusts Store-bought for convenience.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  • Roll out the pie crusts and cut into small circles that fit into a mini muffin or tart pan.

Baking

  • Place the dough circles into the pan and fill each with the sweet potato mixture.
  • Bake for 15-20 minutes or until the edges are golden.
  • Allow to cool slightly before serving. Optionally top with whipped cream.

Notes

Store leftovers in the refrigerator for about 3-5 days or freeze for longer storage. Reheat in the oven at 350°F for best results.
