  • 1 can black beans, drained and rinsed
  • 1 cup corn Frozen or canned works
  • 1 cup diced tomatoes Fresh or canned
  • 1 cup shredded cheese Choose your favorite cheese
  • 1 cup Doritos, crushed Any flavor you prefer
  • 1 each avocado, diced or guacamole Optional topping
  • 1 cup chopped lettuce For freshness

Optional Toppings

  • to taste sour cream For creaminess
  • to taste salsa For added flavor
  • to taste taco seasoning Adjust according to preference

Preparation

  • In a large bowl, combine the cooked rice, black beans, corn, and diced tomatoes. Mix well to combine.
  • Add taco seasoning to taste and mix until evenly coated.
  • Serve the rice mixture in bowls, and top with crushed Doritos, shredded cheese, diced avocado, and chopped lettuce.
  • Add sour cream and salsa on top if desired.

Notes

Leftovers can be stored in the fridge for up to three days. For longer storage, freeze the rice mixture without toppings for up to a month. Reheat in the microwave until hot.
