Main Ingredients

  • 1 pound Sausage Any flavor of sausage can be used.
  • 2 cups Cheddar cheese, shredded Feel free to mix with other cheeses.
  • 32 ounces Tater tots
  • 6 large Eggs
  • 1/2 cup Milk You can adjust the amount of milk to preference.
  • 2 cloves Garlic, minced
  • 1 small Onion, diced
  • 1/2 teaspoon Black pepper Adjust to taste.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, cook the sausage over medium heat until browned.
  • In a large bowl, whisk together the eggs, milk, garlic, onion, and black pepper.

Assembly

  • In a greased casserole dish, layer the tater tots, followed by the cooked sausage and shredded cheddar cheese.
  • Pour the egg mixture over the top.

Cooking

  • Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
  • Let it cool slightly before serving.

Notes

Pairs well with fresh fruit salad or light green salad. Can be served with sour cream or salsa. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze in portioned containers.
