Texas Roadhouse Rolls

Ingredients
  

  • 4 teaspoons active dry yeast
  • 1/2 cup warm water (110°F/43°C)
  • 2 cups scalded milk, cooled to lukewarm
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 large egg , room temperature
  • 2 teaspoons sal t
  • 7 to 8 cups all-purpose flour
  • 1/2 cup unsalted butter, softened (for cinnamon butter)
  • 1/4 cup powdered sugar (for cinnamon butter)
  • 1/4 cup honey (for cinnamon butter)
  • 1 teaspoon ground cinnamon (for cinnamon butter)

Instructions
 

  • In a small bowl, dissolve yeast and 1 teaspoon of sugar in warm water; let sit until foamy, about 5-10 minutes.
  • In a large bowl or stand mixer, combine the lukewarm milk, remaining sugar, melted butter, egg, and salt.
  • Add the yeast mixture and 3 cups of flour; mix until smooth.
  • Gradually add remaining flour, 1 cup at a time, until a soft dough forms.
  • Knead the dough for 5-7 minutes until smooth and elastic, then place in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  • Punch down the dough and roll out onto a floured surface to 1/2-inch thickness.
  • Cut the dough into 2-inch squares using a pizza cutter and place on greased baking sheets.
  • Cover and let rise again until doubled, about 45 minutes.
  • Preheat oven to 350°F (175°C) and bake for 12-15 minutes or until golden brown.
  • While rolls bake, whisk together softened butter, powdered sugar, honey, and cinnamon until light and fluffy.
  • Brush warm rolls with additional melted butter and serve with the cinnamon honey butter.
