Ingredients
  

  • 2 oz quality blanco tequila
  • 1 oz fresh lime juice
  • 3/4 oz triple sec or Cointreau
  • 1/2 oz agave nectar or simple syrup
  • 6-8 fresh blackberries
  • 4-5 fresh thyme sprigs
  • Coarse salt for rim optional
  • Ice cubes

Instructions
 

  • In a cocktail shaker, gently muddle blackberries with 2-3 thyme sprigs to release juices and oils without pulverizing.
  • Add tequila, fresh lime juice, triple sec, and agave nectar to the shaker.
  • Fill shaker with ice and shake vigorously for about 15 seconds until well chilled.
  • Double strain the mixture into a rocks glass filled with fresh ice to remove pulp and thyme bits.
  • Garnish with a fresh thyme sprig and a couple of blackberries. Serve immediately.

Notes

Use fresh, ripe blackberries for best flavor; frozen berries are a good substitute if fresh aren’t available.
Fresh thyme is essential for aromatic flavor—lemon thyme can add a nice citrus twist.
For a spicy kick, muddle a thin jalapeño slice with the berries and thyme.
Substitute half the tequila with mezcal for smoky depth.
Add a splash of prosecco for a festive spritz variation.
To batch-make, prepare a blackberry-thyme simple syrup ahead by simmering equal parts sugar and water with blackberries and thyme, then strain.
