Ingredients
  

For the Brownie Base:

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 1 tbsp instant espresso powder

For the Coffee Soak:

  • 1/2 cup strong brewed coffee
  • 1 tbsp coffee liqueur optional
  • 1 tbsp sugar

For the Mascarpone Layer:

  • 8 oz mascarpone cheese room temp
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 3/4 cup heavy whipping cream

For the Topping:

  • 1 tbsp cocoa powder for dusting
  • Chocolate curls optional

Instructions
 

Prepare the Brownie Base:

  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper.
  • Whisk melted butter and sugar together.
  • Add eggs one at a time, then stir in vanilla.
  • In a separate bowl, mix flour, cocoa powder, salt, and espresso powder.
  • Fold dry ingredients into wet mixture until just combined.
  • Spread into prepared pan and bake for 20-25 minutes until set.
  • Let cool slightly.

Coffee Soak:

  • While brownies are still warm, poke holes with a fork.
  • Mix coffee, liqueur, and sugar, then pour evenly over brownies.
  • Refrigerate for 30 minutes.

Mascarpone Layer:

  • Beat mascarpone, powdered sugar, and vanilla until smooth.
  • In a separate bowl, whip heavy cream until soft peaks form.
  • Gently fold whipped cream into mascarpone mixture.
  • Spread evenly over brownies.
  • Chill for at least 4 hours (preferably overnight).

Finishing Touches:

  • Dust with cocoa powder before serving.
  • Add chocolate curls if desired.
  • Cut into squares using a hot knife for clean slices.

Notes

For a stronger coffee flavor, increase espresso powder in brownies.
Use high-quality mascarpone for best results.
Store in an airtight container in the fridge for up to 5 days.
Brownies can be frozen for up to 1 month.
