  • 2 pieces Chicken breasts (boneless, skinless)
  • 8 ounces Penne pasta (al dente)
  • 1 tablespoon Olive oil
  • 28 ounces Canned crushed tomatoes
  • 3 cloves Garlic (minced)
  • 1 small Onion (finely chopped)
  • 1 teaspoon Dried Italian herbs (oregano and basil)
  • To taste Salt
  • To taste Pepper
  • To taste Fresh basil leaves (torn)
  • 1/2 cup Grated Parmesan cheese
  • To taste Red pepper flakes

Instructions
 

Preparation

  • Cook the penne pasta until it’s al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook until soft and golden.
  • Slice the chicken breasts into bite-sized pieces and add them to the skillet. Cook until they are no longer pink.
  • Add the crushed tomatoes and Italian herbs. Season with salt and pepper to taste.
  • Let it simmer for about 10 minutes, then mix in the pasta. Stir in fresh basil and Parmesan cheese before serving.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on the stove over low heat.
