Ingredients
  

  • 6 oz Feta cheese
  • 2 oz Cream cheese
  • 2/3 cup Olive oil
  • 2 lbs Fresh heirloom or cherry tomatoes
  • Fresh basil leaves
  • 20-25 Baguette slices
  • 2 tsp Garlic minced
  • 2 tbsp Shallots minced
  • 1 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 1 tbsp Honey
  • Salt and pepper to taste

Instructions
 

  • Prepare the whipped feta: In a food processor, blend feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, zest, and honey until smooth. Set aside.
  • Roast the tomatoes: Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  • Toast the crostini: Arrange baguette slices on a baking sheet. Lightly brush with olive oil and toast at 400°F for 8-10 minutes until golden.
  • Assemble the crostini: Spread a layer of whipped feta on each crostini, top with roasted tomatoes, and garnish with fresh basil.
  • Serve and enjoy! Arrange on a decorative platter and serve immediately.

Notes

Use full-fat Greek yogurt for extra creaminess.
Store leftover whipped feta in an airtight container for up to 3 days.
Experiment with different toppings like balsamic glaze or chopped nuts.
