Ingredients
  

Main Ingredients

  • 4 slices slices of bread (such as ciabatta or sourdough)
  • 8 ounces sliced turkey breast
  • 4 tablespoons basil pesto Use fresh pesto for best flavor.
  • 4 slices sliced cheese (such as mozzarella or provolone) Feel free to mix cheeses.
  • 2 tablespoons olive oil or butter For brushing the sandwich.
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat a panini press or grill pan.
  • Spread basil pesto on one side of each slice of bread.
  • Layer sliced turkey and cheese on top of the pesto on one slice of bread.
  • Top with the second slice of bread, pesto side down.
  • Brush the outside of the sandwich with olive oil or butter.

Cooking

  • Place the sandwich in the panini press or grill pan.
  • Cook for 3-5 minutes until the bread is toasted and the cheese is melted.

Serving

  • Remove from heat, slice, and serve hot with a side salad or chips.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet until warm for the best texture.
