Instructions
Heat olive oil in a large skillet over medium-high heat.
Add sliced mushrooms and cook until browned and moisture has evaporated, about 5-7 minutes.
Add diced onion and cook until translucent, about 3 minutes.
Add ground turkey, breaking it apart with a spatula, and cook until no longer pink, approximately 8 minutes.
Stir in minced garlic, salt, pepper, thyme, and red pepper flakes; cook for 1 minute until fragrant.
Add fresh baby spinach in batches, tossing until wilted.
Adjust seasoning to taste and serve immediately.
