Turkey Spinach Mushroom Skillet

Ingredients
  

  • 1 lb ground turkey
  • 8 oz cremini mushrooms, sliced
  • 5 oz fresh baby spinach
  • 1 medium yellow onion, diced
  • 3 cloves garlic , minced
  • 2 tablespoons olive oil
  • 1 teaspoon sal t
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add sliced mushrooms and cook until browned and moisture has evaporated, about 5-7 minutes.
  • Add diced onion and cook until translucent, about 3 minutes.
  • Add ground turkey, breaking it apart with a spatula, and cook until no longer pink, approximately 8 minutes.
  • Stir in minced garlic, salt, pepper, thyme, and red pepper flakes; cook for 1 minute until fragrant.
  • Add fresh baby spinach in batches, tossing until wilted.
  • Adjust seasoning to taste and serve immediately.
