Pasta Cooker
- 350 g Chestnut/Cremini Mushrooms
- 125 g Fresh Shiitake Mushrooms
- 300 g Dry Pappardelle or Tagliatelle Pasta
- 30-45 ml Olive Oil
- 2 Shallots
- 4 Garlic Cloves
- 3 Thyme Sprigs
- 20 ml Soy Sauce
- 15 ml Red Miso Paste
- 20 ml Balsamic Vinegar
- 180 ml Vegan Cream Oatly or similar
- 120 ml Hot Water for stock
- 80 ml Reserved Pasta Water
Sauté the shallots and garlic in olive oil until soft.
Add the mushrooms and thyme, sauté until golden.
Stir in the soy sauce, miso, and balsamic vinegar, cooking for a few more minutes.
Add the vegan cream and hot water, bringing it to a simmer.
Mix in the cooked pasta and reserved pasta water for a creamy finish.
Serve hot and enjoy!
