Ingredients
  

  • 350 g Chestnut/Cremini Mushrooms
  • 125 g Fresh Shiitake Mushrooms
  • 300 g Dry Pappardelle or Tagliatelle Pasta
  • 30-45 ml Olive Oil
  • 2 Shallots
  • 4 Garlic Cloves
  • 3 Thyme Sprigs
  • 20 ml Soy Sauce
  • 15 ml Red Miso Paste
  • 20 ml Balsamic Vinegar
  • 180 ml Vegan Cream Oatly or similar
  • 120 ml Hot Water for stock
  • 80 ml Reserved Pasta Water

Instructions
 

  • Sauté the shallots and garlic in olive oil until soft.
  • Add the mushrooms and thyme, sauté until golden.
  • Stir in the soy sauce, miso, and balsamic vinegar, cooking for a few more minutes.
  • Add the vegan cream and hot water, bringing it to a simmer.
  • Mix in the cooked pasta and reserved pasta water for a creamy finish.
  • Serve hot and enjoy!
