Ingredients
  

For Lavender Simple Syrup:

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons dried culinary lavender buds

For Each Mojito (serves 4):

  • 32-40 fresh mint leaves 8-10 per drink
  • 4 limes cut into quarters
  • 8 tablespoons lavender simple syrup 2 per drink
  • 4 cups club soda or sparkling water
  • Ice cubes
  • Extra mint sprigs for garnish
  • 4 lime wheels for garnish

Instructions
 

Make Lavender Simple Syrup:

  • In a small saucepan, combine sugar, water, and dried lavender buds. Bring mixture to a boil over medium-high heat.

Simmer and Steep:

  • Reduce heat to low and simmer for 5 minutes. Remove from heat and let steep for 30 minutes until fragrant. Strain out lavender buds using fine mesh strainer. Set aside to cool.

Prepare Glasses:

  • Divide mint leaves and lime quarters evenly among 4 tall glasses (8-10 mint leaves and 4 lime quarters per glass).

Muddle Ingredients:

  • Using a muddler or wooden spoon, gently press mint leaves and lime quarters to release oils and juice. Don't over-muddle to avoid bitter flavors.

Add Syrup:

  • Add 2 tablespoons of cooled lavender simple syrup to each glass.

Add Ice and Soda:

  • Fill each glass with ice cubes, then slowly pour 1 cup of club soda into each glass.

Garnish and Serve:

  • Stir gently once, then garnish each glass with a fresh mint sprig and lime wheel. Serve immediately.

Notes

Lavender simple syrup can be made up to 2 weeks ahead and stored in refrigerator
Use only culinary-grade lavender buds, not craft store lavender
For sweeter version, add extra simple syrup to taste
Can substitute honey for sugar in syrup (use 3/4 cup honey)
Fresh mint is essential - dried mint won't provide the same flavor
For batch serving, muddle ingredients in large pitcher and add soda just before serving
