- 6 oz feta cheese crumbled into bite-sized pieces
- 1/4 cup fresh mint leaves torn by hand
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- 1/4 red onion thinly sliced (optional)
- Black pepper to taste
- Flaky sea salt for finishing
Cut the watermelon into 1-inch cubes and place in a large serving bowl.
Crumble feta cheese into bite-sized pieces and add to the bowl.
Tear mint leaves by hand and add them to the mix.
Add thinly sliced red onion if using.
Drizzle with olive oil and lime juice.
