Ingredients
  

  • 4 cups watermelon cut into 1-inch cubes
  • 6 oz feta cheese crumbled into bite-sized pieces
  • 1/4 cup fresh mint leaves torn by hand
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1/4 red onion thinly sliced (optional)
  • Black pepper to taste
  • Flaky sea salt for finishing

Instructions
 

  • Cut the watermelon into 1-inch cubes and place in a large serving bowl.
  • Crumble feta cheese into bite-sized pieces and add to the bowl.
  • Tear mint leaves by hand and add them to the mix.
  • Add thinly sliced red onion if using.
  • Drizzle with olive oil and lime juice.
  • Gently toss the ingredients together, taking care not to break the watermelon.
  • Season with black pepper and a pinch of flaky sea salt just before serving.

Notes

Assemble 30 minutes to 2 hours before serving for best flavor.
Avoid overripe watermelon or pre-crumbled feta.
Toss gently to preserve texture.
Store in the fridge for up to 24 hours, but best enjoyed fresh.
