Watermelon Lime Mint Mocktail

Ingredients
  

  • 4 cups fresh watermelon chunks seeds removed
  • Juice of 2 fresh limes about 1/4 cup
  • 15-20 fresh mint leaves
  • 2 cups cold water or sparkling water
  • 2-3 tablespoons honey or agave syrup
  • Ice cubes for serving
  • Extra mint sprigs for garnish
  • Lime wedges for garnish
  • Pinch of sea salt optional

Instructions
 

  • Cut watermelon into chunks and remove any visible seeds. Chill watermelon in refrigerator if not already cold.
  • Place mint leaves in bottom of large pitcher. Gently muddle with wooden spoon until fragrant oils release. Don't over-muddle to avoid bitterness.
  • Add watermelon chunks, lime juice, and honey to blender. Blend until completely smooth, about 45 seconds.
  • Pour blended watermelon mixture over muddled mint in pitcher. Add cold water and stir gently to combine.
  • Optional: Strain mixture through fine mesh sieve for ultra-smooth texture.
  • Fill glasses with ice cubes. Pour mocktail over ice and garnish with fresh mint sprigs and lime wedges.
  • Add pinch of sea salt if desired. Serve immediately while cold and fresh.

Notes

Use the ripest, sweetest watermelon available for best flavor
Fresh lime juice is essential - bottled juice won't provide the same bright taste
Adjust sweetener based on watermelon ripeness
For sparkling version, use sparkling water and add it last to preserve bubbles
Drink is best served immediately but watermelon base can be made 2 days ahead
Store covered in refrigerator and add mint, water, and ice just before serving
For frozen version, use frozen watermelon chunks and blend until slushy
Recipe easily doubles or triples for larger gatherings
