Ingredients
  

  • 6 cups watermelon cubed (about ½ medium seedless watermelon)
  • 3 cups fresh pineapple chunks
  • ¼ cup fresh mint leaves roughly chopped (optional)
  • 2 tbsp lime juice or lemon juice
  • Optional Add-ins:
  • ½ cup feta cheese crumbled
  • ¼ cup thin red onion rings
  • 1 jalapeño minced and barely seeded
  • 2 tbsp honey or agave
  • Pinch of sea salt

Instructions
 

  • Prep Fruits: Cut watermelon into 1-inch cubes and remove seeds. Slice pineapple into bite-sized chunks. Drain fruit in a colander for 5 minutes to remove excess juice.
  • Combine: Place watermelon and pineapple in a large mixing bowl. Gently toss to combine.
  • Add Mint & Lime: Add chopped mint (if using) and drizzle lime juice over the fruit. Toss gently again.
  • Chill: Refrigerate for 10 minutes to let flavors meld.
  • Add Extras (Optional): Just before serving, fold in any additional toppings like feta, onion, or jalapeño.
  • Serve: Give a final gentle toss and serve immediately.

Best Served Fresh: Consume within 24 hours for best texture.
Dairy-Free Option: Omit feta or use coconut flakes.
