Ingredients
  

  • 1 wild turkey breast thawed
  • 2 cups apple or peach juice
  • 1 cup dark brown sugar
  • ½ cup kosher salt
  • 4 cups water
  • Olive oil for marinade
  • 3 garlic cloves minced
  • ¼ cup soy sauce
  • 2 tbsp Worcestershire sauce
  • ¼ cup maple syrup
  • 1 cup chicken broth
  • Seasoned flour or breading mix for frying
  • Peanut oil for frying

Instructions
 

Thaw the Turkey Breast:

  • Place the breast in the fridge for 24-48 hours to ensure even thawing.

Brine:

  • Soak the turkey in a brine made of apple juice, brown sugar, salt, and water for 6-12 hours.

Marinate:

  • Mix olive oil, garlic, soy sauce, Worcestershire sauce, and maple syrup. Let the turkey marinate for at least 2 hours.

Smoke:

  • Preheat the smoker to 250°F and cook for 2-2.5 hours until the internal temperature reaches 165°F. Baste with drippings every 10 minutes during the last 45 minutes.

Oven Roast:

  • Preheat the oven to 325°F. Place the turkey in a roasting pan with broth and roast until it reaches 165°F, basting occasionally.

Air Fry:

  • Coat turkey strips in seasoned breading and air fry at 400°F for 8-10 minutes.

Deep Fry:

  • Heat peanut oil to 350°F. Fry the turkey for 2-3 minutes per pound until it reaches 165-170°F for white meat. Let it rest for 20 minutes before serving.
