Ingredients
  

  • 2 1/3 cups grated zucchini from about 11 ounces
  • 2/3 cup olive oil
  • 2 large eggs
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 100 % whole-wheat flour to make up 100% of the recipe
  • 2/3 cup walnuts optional
  • 1/3 cup golden raisins optional
  • 1/3 cup oats optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • In a mixing bowl, combine all the dry ingredients: whole-wheat flour, baking powder, baking soda, salt, cinnamon, and oats (if using).
  • In another bowl, beat the eggs and add the oil, sugars, grated zucchini, and vanilla extract. Mix well.
  • Gently fold the wet ingredients into the dry mixture until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the zucchini bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
