- 2 1/3 cups grated zucchini from about 11 ounces
- 2/3 cup olive oil
- 2 large eggs
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 100 % whole-wheat flour to make up 100% of the recipe
- 2/3 cup walnuts optional
- 1/3 cup golden raisins optional
- 1/3 cup oats optional
Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
In a mixing bowl, combine all the dry ingredients: whole-wheat flour, baking powder, baking soda, salt, cinnamon, and oats (if using).
In another bowl, beat the eggs and add the oil, sugars, grated zucchini, and vanilla extract. Mix well.
Gently fold the wet ingredients into the dry mixture until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the zucchini bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
