Ingredients
  

Vegetables and Meat

  • 1 lb ground beef or Italian sausage Use lean meat for a healthier version.
  • 3 medium zucchinis, sliced Drain excess moisture to prevent sogginess.
  • 1 small onion, chopped
  • 1 each bell pepper, chopped

Sauce and Cheese

  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese Experiment with different cheese blends for unique flavors.
  • 1/2 cup grated Parmesan cheese

Seasoning

  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

For Cooking

  • 1 tablespoon olive oil For sautéing vegetables.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper; sauté until softened.
  • Add the ground beef or sausage, breaking it apart as it cooks until browned. Drain excess fat if necessary.
  • Stir in the sliced zucchinis, pizza sauce, Italian seasoning, salt, and pepper; mix well.

Layering

  • In a baking dish, layer half of the meat mixture, sprinkle half of the mozzarella cheese, then repeat with the remaining meat mixture and cheese.
  • Top with grated Parmesan cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  • Let cool slightly before serving.

Notes

To store leftovers, let cool completely and place in the fridge. Will stay fresh for about 3-4 days. Can also be frozen for up to three months.
