Ingredients
  

For the Cajun Chicken:

  • 4 boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 3 tbsp cajun seasoning
  • 1 tsp brown sugar
  • 1 tsp garlic powder
  • Salt to taste

For the Alabama White Sauce:

  • 1 cup mayo
  • 1/4 cup apple cider vinegar
  • 1 tbsp prepared horseradish or Dijon mustard
  • 2 tsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp sugar
  • Salt to taste

Instructions
 

Prep the Chicken

  • Pat chicken dry.
  • Pound to even thickness (~3/4 inch).

Rub with olive oil.

  • Mix cajun seasoning, brown sugar, garlic powder.
  • Sprinkle and press onto chicken.
  • Rest 15 mins to 4 hours in fridge.

Make Alabama White Sauce

  • Mix all sauce ingredients until smooth.
  • Chill for at least 30 mins.
  • Thin with a splash of water if needed.

Grill the Chicken

  • Preheat grill to medium-high (375–400°F).
  • Oil grates.
  • Grill 5–7 mins per side until 165°F internal temp.
  • Let rest 5 mins.

Serve

  • Drizzle sauce over grilled chicken.
  • Garnish with chopped parsley or green onions.
  • Serve extra sauce on the side.

Notes

Sauce improves in flavor after resting.
Cajun seasoning spice level can be adjusted.
For oven option: bake at 425°F for 18–22 mins.
Great for meal prep or sandwiches.
Homemade cajun seasoning enhances flavor, but store-bought works too.
